It is in your best interest to film every public meeting with your town.
New York State Open Meeting Law allows you to film meetings as long as you are not disruptive.

1. Buy a tripod. I like UBeesize Selfie Stick Tripod for about $20 on Amazon because it includes a phone holder and remote.
2. Find an old phone, erase all the data, and install an audio record app and a camera app.
3. At every single meeting set up your tripod and camera and hit the record button before the meeting begins. Stay until the bitter end. Close the tripod, gather your things and walk to your car. Stop the recording when you get in your car.
4. Save the recordings to a computer or upload to Youtube.
Do this for every public meeting.
The equipment may be passed from neighbor to neighbor, but do everything possible to record every meeting.
You never know who may speak, what may be said, or what you want to remember. The video recording may be invaluable for your own records.
